In this online course with Edward Espe Brown, participants will explore taste as a form of careful attention. Each session will be a guided tasting practice, adding one ingredient at a time so that we can come to know ingredients through direct experience.
Together, we will become familiar with the six flavors: salt, sweet, sour, pungent or peppery, bitter, and plain. We will also explore three broad tastes: earth, stem/leaf, and flower/fruit. Rather than beginning with a finished recipe, we will slow down and notice how each ingredient changes what is already present.
One week before each class, students will receive a list of fresh ingredients to have on hand, along with serving suggestions. In each session, we will basically prepare one dish rather than a full meal. Those who would like a complete meal afterward are invited to dream up the rest.
This class is an opportunity to practice cooking, tasting, and paying attention in the spirit of Zen practice.
Recordings:
All course sessions will be recorded, and registered participants will receive temporary access to the recordings for later viewing.
